(serves 4-6 as a vegie)
30g butter
1 small onion, peeled and finely chopped
4 slices prosciutto or equivalent jamón or ham
500g frozen baby peas
Heat the butter and fry the onion until soft. Add the prosciutto and cook two minutes longer. Tip in the peas and stir gently occasionally as they cook (the water should come from the peas as they thaw) for only a few minutes. Season to taste (the prosciutto will have added some salt) and serve.
